Baked Hominy

3 tablespoons butter

1 onion, minced

1/2 cup chopped Bell pepper

3 tablespoons flour

1 teaspoon salt

1/2 teaspoon dry mustard

Dash cayenne pepper

1-1/2 cups milk

1 cup grated Cheddar cheese

1/2 cup chopped pitted ripe olives

1 can (28-oz.) yellow hominy, drained

1/2 cup buttered breadcrumbs

Preheat oven to 375 degrees. Melt butter in iron skillet. Add onion and green pepper and sauté for 5 minutes. Blend in flour and seasonings. Add milk and cook, stirring constantly until mixture thickens and comes to boil. Add grated cheese and stir until melted. Remove from heat and add olives and hominy. Sprinkle with buttered breadcrumbs. Bake 30 minutes or until brown.
