Chicken and Rice

1/2 cup Italian Dressing

1/4 cup soy sauce

1 pound skinless chicken breasts, cut into strips

1 cup chicken broth

1 cup small broccoli florets

1 red pepper, cut into strips

1 cup thinly sliced carrots

2 cups Minute Brown Rice, uncooked

1 teaspoon lemon pepper seasoning

2 tablespoons grated Parmesan cheese

Heat dressing in large skillet on medium-high heat. Add chicken; cook and stir 1 minute. Add broth, broccoli, red pepper and carrots. Bring to boil. Stir in rice. Return to boil. Reduce heat to low; cover. Simmer 5 minutes. Remove from heat. Let stand 5 minutes. Stir in lemon pepper seasoning; sprinkle with cheese. Makes 4 servings, 1-3/4 cups each.
