Cream Cheese Pie
This is a pie recipe that I am happy to share with you. It's one of my best. I made it for my three children, Stephen, Bruce, and Linda, decades ago when they were young. They liked it then and I would bet my farm and best Tennessee mule that they still like it now. This pie is easy to make.
1 pre-made graham cracker pie crust
1 pkg. (8-oz) regular cream cheese (room temperature)
1 cup powdered sugar
1 teaspoon vanilla
1/2 pint whipping cream
1/2 teaspoon vanilla
3 tablespoons sugar
Whip until stiff.
Fold cream cheese mixture into whip cream mixture. Put in pie crust and chill.
(Note from Linda..."Dad's right! I do still like it. I remember Dad also used to substitute 1/4 teaspoon almond extract for vanilla - WOW!")
