4th of July Apple Pie
In a large bowl, combine apples, sugar and constarch. Stir to blend. Allow to stand for 15 minutes then stir in lemon juice and peel.
Preheat oven to 425 degrees F. Fit bottom pastry into a 9 inch pie plate.
Transfer apple mixture to pie shell, piling high in the center. Dot with butter. Moisten rim of crust, then cover with top crust. Trim the overhang evenly. Roll crust edge under and finish as desired. Cut vents in top crust using a small cookie cutter or with a very sharp knife. Brush with milk.
Bake for 15 minutes, then reduce oven temperature to 350 degrees F and bake 35-40 minutes longer. If desired, 5 minutes before pie is done, brush crust again with milk and sprinkle with sugar.
