MINI PARTY PIZZAS
Neighbors get together for holiday parties to enjoy cocktails with hors d'oeuvres while having good conversation. 
This is an excellent recipe and it came from Mrs. Terri Pack.

1 pound sausage
1 pound Velveeta cheese
1 jar Ragu Pizza Quick Sauce
1 package pepperoni
1 cup shredded mozzarella cheese
1 package rye party bread

Crumble sausage in skillet and brown. Pour off grease. Put in microwave bowl. Cut Velveeta cheese into cubes and put in bowl with sausage. Microwave on high about 1-1/2 minutes. Stir often.

Remove as soon as cheese begins to melt. It will continue melting when removed from oven. Let melt and stir well. This mixture can be placed in refrigerator for later use if desired.

Separate party bread onto cookie sheet. Lightly toast bread in oven. Turn over and toast on other side. After toasting bread, place 1 spoonful Ragu pizza sauce on each slice of bread spreading to edges. Spoon small amount of sausage/cheese mixture onto sauce. Sometimes it is best to spread out with fingers. Place slice of pepperoni on top of sausage mixture. Top with shredded mozzarella cheese.

Return to oven and cook at 350 degrees until cheese is melted. Place on warming tray to keep hot for party. Pizzas can be frozen and reheated in microwave.

Lemon Bars Crust: 2c Flour 1/2 c Powdered sugar 1c Cold butter (2 cubes) Filling: 4 eggs, lightly beaten 4T. Flour 2/3 c Fresh lemon Juice 2c sugar 1 tsp baking powder Mix first 3 ingredients together in an electric mixer, until consistency of cornmeal. Press in bottom and sides of a 10 1/2" x 15 1/2" cookie sheet (jelly roll pan) and bake @ 350 degrees for 13 minutes. While above is baking, combine remaining ingredients and mix well. Pour over partially baked crust and return to 350 degree oven for 20-25 minutes or until lightly brown. Remove from oven and sprinkle with powdered sugar.  Loosen edges while hot and score top with a sharp knife, using a chopping motion. (Lift the knife after making each mark) Cut through the crust when cool. Enjoy
