Sweet Potato Biscuit
1 cup mashed sweet potatoes
1 tablespoon baking powder
1/4 cup milk
1 teaspoon salt
1/4 cup sugar
1/4 cup lard (or other shortening)
2-1/2 cups flour
1/4 cup nut meats (optional)
Boil potatoes until tender and mash. Mix with milk and sugar. Put on stove to get hot. Run this mixture through a sieve over flour sifted with baking powder and salt. Mix in shortening (and nuts if desired) until mixture is stiff, Place on lightly floured board and knead lightly about six times. Roll dough or pat out to about 1/2 inch thick. Cut with floured biscuit cutter. Bake at 450 degrees on ungreased baking sheet for 10-12 minutes.
